Baked Smashed Red Potatoes





















Ingredients

Red Potatoes
Olive Oil
Salt and Pepper
Fresh cut Herbs ( I used Rosemary)
Crushed Garlic
Parmesan Cheese


Preparation

Boil some red potatoes for 20 minutes or until fork tender.
Preheat oven to 450.
Drizzle olive oil on a baking sheet.
Set potatoes on sheet and use a potatoe smasher. Gently smash each potatoe, rotating the masher both ways (so it looks like a thick cookie)
Drizzle with olive oil.
Season with salt and pepper.
Sprinkle with fresh cut herbs and crushed garlic.
Top with grated Parmesan Cheese.
Bake for 20 minutes.

I stumbled on this recipe on Facebook, you could say perfect timing since i had some out of town guest visiting and wanted to make something different.
